 Ana Fruit deployed FreshSens technology in their cold storage facilities in Turkey to explore better preservation methods for cherries during peak harvest season.

 A side-by-side 44-day trial compared FreshSens technology with a traditional cold room using 31,790 kg of cherries, extending the typical 10–15 day storage window by up to 3x without compromising quality.

 Results: FreshSens significantly reduced weight loss (0.75%) and unmarketable produce (1.81%) compared to control storage (8.71% weight loss and 52.08% unmarketable produce).

 Outcome: A promising solution for extending storage and reducing waste by safely storing surplus produce for off-peak demand.


The Challenge

Ana Fruit aimed to solve two major challenges faced during cherry season:

 Extending the season by improving post-harvest storage.

 Preventing losses during mid-season when supply peaks but demand lags, by safely storing surplus cherries for later sale.

Traditional cold storage methods resulted in high levels of waste and loss of product quality over time. A new approach was needed to maintain marketability for longer durations without compromising freshness or safety.

The Solution

FreshSens is a technology-driven startup revolutionizing the way fruits and vegetables are stored. Using AI-powered smart sensors, we monitor and control storage environments by tracking oxygen and CO₂ levels, temperature, humidity, and respiration rates. Our CA Storage Containers create optimized oxygen and carbon dioxide levels, slowing down ripening and senescence and reducing spoilage without chemicals. To address these issues, Ana Fruit initiated a 44-day trial in collaboration with FreshSens at their cold storage site in Eğirdir, Isparta. The trial, conducted between July 19 and September 1, 2023, involved a total of 200 storage units filled with 31,790 kg of ‘0900-Ziraat’ cherries. The cherries were stored under two conditions:

 Cold room with FreshSens technology.

 Traditional cold room (Control)

Key metrics like weight loss and unmarketable produce ratio were closely monitored. The results were striking:FreshSens provided superior preservation, dramatically reducing waste and helping maintain the commercial value of the cherries throughout the 44-day period. This successful outcome suggests that FreshSens can help fruit producers store surplus harvests safely and sell them at better prices when market demand rises, effectively turning oversupply into opportunity.

IoT sensors inside each storage box continuously monitor the environmental conditions, including oxygen and CO2 levels, temperature, humidity, and respiration rates.
